Instant Pot Green Chile Chicken Soup

Instant Pot Green Chile Chicken Soup - A quick, easy, and delicious soup recipe filled with beans, green chiles, a little cream cheese, diced tomatoes, and spices. It's a great weeknight dinner idea and makes several lunches for the week!

  • 1.5 pounds chicken breasts (about 3)
  • 2 cans black beans, drained
  • 1 can Great Northern Beans, drained
  • 1 10 oz can green chile enchilada sauce
  • 1 4 oz can diced green chiles
  • 1 15 oz can chicken broth
  • 1 10 can diced tomatoes with green chiles (I use Mild)
  • 4 tsp chili powder
  • 1 tbsp cumin
  • 1 tsp creole seasoning
  • 1/4 tsp blak pepper
  • 4 oz cream cheese
  • 1 lime, sliced into wedges for juice
  • Optional Toppings: fresh cilantro, shredded cheese, tortilla chips
  1. Place all ingredients in Instant Pot except for lime and toppings.
  2. Place lid and lock it and make sure valve is set to sealing.
  3. Cook on Manual for 15 minutes and let it naturally release for 5 minutes. Then turn the seal valve to do a quick release.
  4. Ladle warm soup into serving bowls and top with cilantro and fresh lime juice. Serve with chips.
  5. *Add a little shredded cheese if you like.
