Slow Cooker Butter Chicken

Slow Cooker Butter Chicken is a really easy version of this savory dish. Tender chicken slowly simmered in a mild yogurt and butter curry sauce with garlic, ginger, onions, coriander, and garam masala. Serve over basmati rice and top with fresh cilantro.

Ingredients
  • 1 1/2 lbs boneless skinless chicken thighs, cut into 1-inch pieces
  • 1 cup half-and-half
  • 1 medium vadalia onion chopped
  • 1 cup tomato puree
  • 6 oz tomato paste
  • 1/4 cup plain yogurt
  • 1/4 cup water
  • 2 tbsp cornstarch
  • 2 tbsp unsalted butter
  • 2 bay leaves
  • 2 tsp lemon juice
  • 2 tsp garlic powder
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 1/2 tsp ginger powder
  • 1 tsp coriander
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper or to taste
  • 1 bunch chopped fresh cilantro for garnish
Instructions
  1. Add all ingredients except for water and corn starch to slow cooker and stir to combine.
  2. Whisk corn starch and water together. Pour into slow cooker and stir into sauce.
  3. Cook on HIGH 4 hours or LOW 6-8 hours, or until chicken is cooked through.
  4. Garnish with fresh cilantro and serve.
