Strawberry Agua Fresca (agua fresca de fresa) is an easy Mexican drink of refreshing fruit water that is lightly sweetened and uses fresh summer strawberries.

  1. 4 cups fresh strawberries, hulled and quartered
  2. 1/2 cup + simple syrup* (recipe in instructions)
  3. 1/3 cup lime juice, freshly squeezed
  4. 8 cups cold water
  5. extra strawberries and limes for garnish, optional
  1. To make simple syrup, combine 1 cup water with 1 cup granulated sugar in a small saucepan. Stir over medium heat until sugar dissolves or mixture starts to boil. Remove from heat and cool slightly. (Yields approximately 1 1/4 cups of simple syrup.)
  2. Blend strawberries with 1/2 cup of simple syrup and 1 cup of cold water until smooth. 
  3. Set a fine mesh strainer (with a layer of cheesecloth, if you have it) over a large pitcher. Pour the strawberry mixture through the strainer. Use a spatula to press the fruit/pulp through. Repeat if needed. Discard the seeds/pulp.
  4. Add the remaining 7 cups of water and lime juice to the pitcher. Stir and add extra simple syrup to desired sweetness, if needed. Keep cold, or serve with ice.
